parsnips + carrots + celery + onions + curry powder + chili powder + garden herbs + 1 tbsp. sour cream

Yesterday, i made a big pot of stock to use in soups and chicken+dumplings. I usually throw away (compost) the veggies after they have been boiled to death but this time i saved them and thought i’d blend them into a little creamy soup for lunch. Granted, part of the nutrients had already been cooked out, but it utilized what i had and was a nice change from icy smoothies on an autumn day.
